<p>Most of us in the US have not had much, if any exposure to Mexican cheeses. When we see cheese in Mexican dishes, it is usually familiar types like cheddar or Monterey Jack rather than a queso fresco or cotija. While these common cheeses may indeed pair well with some dishes, they are by no means the only options out there for cooks looking to add a little something to their Mexican recipes.</p>
<p>However, Mexico has many cheeses to try for yourself and thankfully; many of these products are becoming increasingly available here as well. Ever since Mexican farmers began making cheese, it has been an important part of the country&#8217;s culinary heritage, just as it is in the US; but of course, with its own unique spin.</p>
<p>The art of cheese making came to the Americas with the Spanish, who imported goats and cows. These new foods were quickly adopted by Mexican cooks and styles unique to the country soon developed and some Spanish style cheeses found new fans in the New World. Mexican cheeses provide a variety of different flavors and textures perfectly suited for a wide array of <a target='_blank' href="http://www.mexicanfoodrecipes.org/">traditional Mexican foods</a>.</p>
<p>Quesadillas are something, which are familiar to most Americans, though the cheese used in making these popular snacks in Mexico is less so. Queso Oaxaco is the cheese of choice for this dish in Mexico. It is a type of cheese, which is similar to string cheese and has a mild flavor, which suits it for use in quesadillas and other recipes where a mild melting cheese is called for as well as eaten on its own as a snack. Queso Oaxaca is becoming easier to find in the states and cooks looking to add an authentic flavor to their quesadillas will find this cheese well worth seeking out.</p>
<p>Some have called Cotija Mexico&#8217;s answer to Romano and Parmesan cheeses. Cotija is a hard, sharp, salty cheese, which can be crumbled or grated into salads or used to top soups and refried beans. The texture and flavor of this cheese are very much like that of the aforementioned Italian cheeses and it does indeed also make a good accompaniment to pasta dishes. Named for the town of Cotija in Mexico&#8217;s Michoacn state, this is one cheese you should certainly consider trying for yourself.</p>
<p>A popular cheese for the Mexican sandwiches called tortas is queso criollo. This is a pale yellow cheese with a mild, nutty flavor, which is somewhat like Munster. Originally made in the state of Guerrero, this cheese is a good choice for sandwiches of all sorts; you may occasionally even find it grated for use in quesadillas.</p>
<p>A Spanish cheese, which is almost more strongly associated with Mexico, since it has been so widely brought into use in Mexican <a href="http://cooking.clinecare.com/blog/goodcooking" style="" target="_blank" rel="nofollow" onmouseover="self.status='cooking';return true;" onmouseout="self.status=''">cooking</a>, is queso fresco. This is a soft, mild cheese, which is traditionally made using a mixture of cow&#8217;s and goat&#8217;s milk. This cheese is excellent crumbled as a topping for tacos, as a filling in chiles rellenos and is wonderful with salads or served with fruit.</p>
<p>It would take a lot more space than we have here to go into detail about all of the many delicious Mexican cheeses, which can add little something extra to your favorite Mexican recipes. Maybe, you aren&#8217;t sure.  I will tell you how to eat spaghetti in this article.</p>
<p>So, what are the table manners when you are <a href="http://cooking.clinecare.com/blog/goodcooking" style="" target="_blank" rel="nofollow" onmouseover="self.status='eating';return true;" onmouseout="self.status=''">eating</a> spaghetti?  The very first rule is to keep your hands on the table and your elbows off of the table.  Definitely be sure to wait for everyone to be served before starting to eat your spaghetti.  The most common mistake is to overload too much pasta on the fork and this leads to only bad things. If you decide its too big or too long, drop it down and pick up a smaller bite of spaghetti. Do not use your spoon to roll the noodles and never bite off the excess and let it fall back into your bowl.  You can bite off spaghetti and put it back into your bowl all you want, at home.</p>
<p>Common mistakes: Dont slurp. Absolutely no sounds of any kind while you eat.  Dont splatter.  Spaghetti can sometimes splatter the sauce. So be careful, but dont wear a napkin as a bib unless you are a small kid.  Avoid spaghetti for large or formal parties. Short pasta (rigatoni, penne, etc) are much easier to serve and to eat.</p>
<p>Spaghetti are served in a piatto fondo a deep bowl like a shallow soup-dish with a rim.  If the dish is not like this, don&#8217;t worry, you will still be able to eat without making a mess.  Make room at the front of the bowl pushing the spaghetti a little toward the center. Take a little bunch of the spaghetti with the prongs of the fork. Push it against the front side.  </p>
<p>Now, using your fork with the prongs against the rim of the bowl, twirl the fork clockwise with your fingers to roll the spaghetti around your fork. Raise the fork with the spaghetti wrapped around above the bowl, and measure the length with your eyes.  It&#8217;s pretty much common sense when it comes to <a href="http://cooking.clinecare.com/blog/goodcooking" style="" target="_blank" rel="nofollow" onmouseover="self.status='eating';return true;" onmouseout="self.status=''">eating</a> spaghetti.</p>

<p>If you don&#8217;t have one already, get a simple dough recipe off the Internet.  As long as it calls for flour, water, salt, oil and yeast as ingredients, you&#8217;re covered.  That&#8217;s the basic five things you need.</p>
<p>Before we start, we should mention a good <a href="http://cooking.clinecare.com/blog/goodcooking" style="" target="_blank" rel="nofollow" onmouseover="self.status='cooking';return true;" onmouseout="self.status=''">cooking</a> habit to get into.  Measure out and assemble all your recipe ingredients before you start.  That way the whole mixing procedure can go very quickly and without stopping.</p>
<p>It&#8217;s a good idea to mix all your dry ingredients first before adding any liquid.  Mix the flour, salt and yeast, then add the water.  Make sure the water is around 105 degrees to allow the yeast to work.  </p>
<p>You&#8217;ll need a stout spoon or other utensil to combine the ingredients as it gets stiff quickly.  Once you have the first ingredients mixed, add the oil.  Stir again until everything is incorporated.</p>
<p>Kneading the dough comes next.  Turn out the dough ball onto a floured work surface.  Add a little flour to the ball and to your hands to prevent sticking.  You&#8217;ll likely need more during the kneading process, so just put a  cup of so in a little dish near the work area.</p>
<p>Kneading is simple, repetitive procedure required to work up the gluten in the flour.  If you just follow a method of pushing down on the dough while pushing it away from you at the same time you&#8217;ll have no trouble getting the results you want.  Fold the dough back over itself after each knead stroke and rotate it 90 degrees, then push down and away again.  After 5 minutes, you should begin to notice the dough getting very smooth and elastic.  This is your sign that it&#8217;s ready. </p>
<p>After placing the dough in an oiled bowl, move it all around to coat with the oil.  Put plastic wrap over it and put it in a warm part of the kitchen.  After about two hours it should be doubled in size.</p>
<p>Once risen, turn the dough out onto a floured surface again and flatten and shape it some with your hands.  Begin rolling it out with a rolling pin until you get the thickness you want.  Many people prefer a 1/8&#8243; thickness.</p>
<p>After rolling, transfer the dough to your baking pan.  Be careful as it can tear.  If it does, try to pinch it closed.  If this doesn&#8217;t work, simply wad it up into a ball again and re-roll it.  When successful at getting it to the pan, trim as necessary to make it fit and look good.</p>

<p>Over the last decade or so, salsa has really caught on with the American palate, managing to overtake ketchup as the best selling condiment in America. The most popular type is the mild tomato-based one discussed above, but there are a lot of different varieties you may want to try. While many are spicier than what you may be familiar with, fear not: there are Mexican salsas for every palate, from the most heat-averse to the most adventurous.</p>
<p>Salsa is actually a general term; the word simply means &#8220;sauce&#8221; in Spanish. Of course when we in the states say salsa we are thinking of a certain kind of sauce used as a condiment for Mexican dishes and as a dip &#8211; but there are a lot of different kinds of salsas out there made from an incredible variety of ingredients.</p>

<p>Stuffed pizza crusts have created quite a boost in sales at pizza restaurants too.  This new product has stirred a hungry crowd into action.  It has also allowed these stores to raise prices based on the new concept.</p>
<p>With this in mind, we&#8217;re going to introduce you to making a stuffed pizza crust pizza at home.  You&#8217;ll be saving money and you&#8217;ll actually be <a href="http://cooking.clinecare.com/blog/goodcooking" style="" target="_blank" rel="nofollow" onmouseover="self.status='eating';return true;" onmouseout="self.status=''">eating</a> a better tasting pie.</p>
<p>Flour, water, oil and yeast are all it takes to make stuffed pizza crust dough.  Check the Internet for a generic recipe. </p>
<p>Measure out the flour and pour it onto a cutting board.  Make a mound, then make a hollow well in the center of it about 6&#8243; in diameter.  Pour the warm water into it with the yeast added.  Stir it for a couple of minutes.  You will see the water turn cloudy then a slight foam will form.  This lets you know the yeast has been activated.  Finally, add your oil.</p>
<p>Using your fingers, begin stirring the mixture while pulling small amounts of flour into it.  Be careful not to take too much flour or the mixture will leak out.  Keep doing this in a circular motion until the mixture gets too thick to run, then pull all the flour into the center.  Keep folding the stuffed pizza crust dough until a ball forms.</p>
<p>Add a little flour to the dough ball as you begin to knead it.  It will try to stick to you and the cutting board if you don&#8217;t.  Knead for 5 minutes or so until the stuffed pizza crust dough is shiny and resilient to the touch.</p>
<p>The yeast is now given time to do its work.  Put the stuffed pizza crust dough into a covered bowl and let it sit in a warm place for a couple hours.  It should double in size.</p>
<p>When ready, take the dough from the bowl and cut off what you need for your first stuffed crust pizza.  It should only take a fist-sized ball of dough for a thin stuffed pizza crust.</p>
<p>Roll it out until it&#8217;s about 1/8&#8243; thick.  Starting about 1-1 1/2&#8243; in from the edge, starting placing cheese sticks or grated cheese in a narrow row all around the outside edge of the pizza.</p>
<p>Now fold the dough outside the cheese row back over the cheese.  Seal it in place by pressing it into dough inside the row.  Do this for the whole pizza.</p>
<p>Guess what?  You just made your first stuffed pizza crust shell!  Now go get those toppings, load it up and shove it in the oven!</p>
